Cauliflower, sweet potato and bean curry

I love sweet potato in almost any form and I love cauliflower. I also wanted something hearty so added two types of beans. You could call this a spicy stew or a curry. Whatever it is called it was very tasty and made 4, 2 ladle portions for my freezer. In the pic below I only served a one ladle portion. So this makes a very substantial amount for 4 or could easily feed 6 – 8 with lots of rice, breads etc. 

Prep time 5 mins

Cook time 40 mins 

INGREDIENTS

  • 1 tsp olive oil
  • 1 onion finely chopped 
  • 4 cloves of garlic chopped 
  • 2 stalks of celery chopped
  • 1/2 cauliflower cut into florets
  • 2 sweet potatoes cubed
  • 1 tin canalini beans
  • 1 tin pinto beans
  • 1 tin of chopped tomatoes 
  • 1 tin of coconut milk 
  • 1/2 cup of water
  • 1 vegetable stock cube or stock pot
  • 1/4 tsp mustard powder 
  • 1/4 tsp chilli powder (I used mild but you can use hot) 
  • 1 tsp cumin 
  • 1 tsp fenugreek 
  • 1 tsp turmeric 
  • 1 tsp paprika 
  • 1 tsp ginger 

METHOD

  • saute the onions in the tsp of olive oil until translucent 
  • Add the chopped garlic and cook for around a minute
  • Add the celery, cauliflower, sweet potato and both types of beans stir around and cook for a minute or 2
  • Add the water, tomatoes, coconut milk, stock cube and all the spices. Stir well
  • Put the lid on the pot and simmer until all veg is tender

Serve with rice, I used brown and I cook my rice in vegetable stock for flavour.
